Ouzo Matarelli - Handmade
Ouzo Matarelli is a handmade ouzo of limited production, 100% distilled, that bears the signature of Charalampos Matarellis, who is an expert in the cultivation of the best anise.
Charalampos Matarellis is a true-born Mytilenian and a man of the countryside that has dedicated his life in the anise. For years he has been cultivating his coastal anise fields in Lisvori, Lesvos and has been collecting the best anise, using biological methods.
Before the distillation process, each sack with anise is being sunk in the sea, to get a special flavour. This procedure, along with the aromatic anise that is used in the production process, give a unique aroma and flavour to Ouzo Matarelli.
The distillation process takes place in small handmade cauldrons – copper stills – that are placed on natural fire from olive timbers. These copper stills are built with the traditional firebricks of the area. In the production process only natural raw materials are used.
In each stage of the production process all work is made by hand, which is a special characteristic of this ouzo of limited production. From the seeding of anise that begins in February in the small and finite fields of Charalampos Matarellis, up to the harvest and the threshing that take place in July, all work is handmade.
The exceptional quality of the fresh anise, the special process of the immersion of the sacks in the sea before the distillation, the substitution of sugar with the multi – awarded honey of Mytilene in the recipe and the handmade production, elect the uniqueness of Ouzo Matarelli.
